Silky, rich, and completely dairy-free, this no-bake cashew cheesecake delivers all the decadent creaminess of a traditional dessert with none of the heavy dairy. Raw cashews blend effortless into a velvety, naturally tangy filling, nestled atop a naturally sweet almond and date crust. It’s an effortless, prep-ahead dessert that’s as wholesome as it is luxurious.

Ingredients
For the Almond-Date Crust:
Raw Almonds: 1 cup
Medjool Dates: 1 cup (pitted, ~8 dates)
Salt: A pinch
For the Cheesecake Filling:
Raw Cashews: 2 cups (soaked in boiling water for 20 minutes, then drained)
Coconut Cream: ½ cup (thick top cream from a chilled full-fat coconut milk can)
Maple Syrup / Agave: ⅓ cup
Lemon Juice: 3 tbsp (freshly squeezed for tang)
Coconut Oil: ⅓ cup (melted)
Vanilla Extract: 1 tsp
Preparation
Step 1
Prepare the Crust: Add almonds, pitted dates, and salt into a food processor. Pulse until the nuts are finely crumbled and the mixture sticks together when pressed. Press the dough firmly into the bottom of an 8-inch springform pan lined with parchment paper. Place in the freezer while preparing the filling.
Step 2
Blend the Filling: Add the soaked and drained cashews, coconut cream, maple syrup, lemon juice, melted coconut oil, and vanilla extract into a high-speed blender. Blend on high for 2–3 minutes until completely smooth, creamy, and free of any grit.
Step 3
Assemble: Pour the cashew filling over the set crust and smooth out the top with a spatula. Tap the pan gently on the counter to release any trapped air bubbles.
Step 4
Set & Chill: Cover tightly and freeze for at least 6 hours, or overnight, until set.
Step 5
Serve: Slice directly from frozen or let it sit at room temperature for 10–15 minutes before serving for a softer, velvety texture. Top with fresh berries or berry compote if desired.
